Raw Milk

Jerseys raised on pasture 24/7/365, supplemented with alfalfa when milking, at Alday Farm exclusively for Heritage Hen Farm (Arcadia, FL).

Milked once per day.

The herd roams at-will to graze 24/7/365 (zero confinement) and may free-choice on organic alfalfa (nonGMO alfalfa when organic is not available), at milking time. Our cows and her milk are truly 100% grass, no grain, no corn, no soy, no cottonseed nor brewer's yeast, nor any; hormones, antibiotics, steroids or GMO’s ever used, and we do not practice artificial insemination. We do not ever separate calves from their mama. After milking, the herd rotates immediately onto new pasture instead of the same pasture entered from, in-keeping with our regenerative farming standards. We are not certified organic (by choice due to cost) but we do practice organic standards. The pastures are fertilized most often with our skim milk or whey after churning butter/cheesemaking, and not chemicals, ever.

Cows innately prefer grazing, digesting and ruminating (chewing cud) grass, which also makes for milk that is; 5x higher in CLA (Conjugated Linoleic Acid), higher vitamins & antioxidants, and balanced healthy EFAs (Omega3 to Omega6).

Store this raw milk inside the fridge but not the door where it's warmer. Ideal temp is 30°-32°. At this temperature, the milk will keep 8-10 days. The colder your milk, the longer before it begins to clabber and ripen (fat begins to separate from the protein). Raw Milk will eventually sour (ripen) on its own, and that is how creameries used to culture cheeses. If you transfer your raw milk into your glass jars, it will chill colder and prolong the time before it ripens.
